Västerbottensost - Swedish Cheese pie Recipe

Impress your guests with a Västerbottensost cheese pie

Planning on hosting a traditional kräftskiva crayfish party? Don't forget the västerbottensost - which is really three words joined together: Västerbotten’s cheese pie using a cheese from the Västerbotten region of Sweden.

Totally Swedish share their recipe with TOAST so you can make this tasty, creamy, cheesy side.

For the Pastry

  • 125g butter
  • 300ml flour
  • 1 spoon water
For the Filling
  • 150g grated Västerbottencheese (available at Totally Swedish)
  • 3 x eggs
  • 200ml cream
  • 1 pinch of black pepper 


Put the oven on 225°.

Mix butter and flour like a crumble paste.

Add water and mix it to a smooth dough.

Cover the baking tray with dough (app 24 cm round baking tray).

Make small holes with a fork in the dough and put in the oven for approximately 10 minutes.

Whip together the egg and cream and add the cheese and a little bit of salt and pepper.

Pour the filling in the tray with the dough and bake for another 20 minutes until the dough is firm.

Leave to cool.

Serve with crayfish!
