TOAST.Life chats to expert cake designer Yevnig Davis, founder of Unique Cakes by Yevnig, to hear about what keeps her inspired and what it takes to make seriously luxurious cakes, as well as her top tips for 2018’s tasty trends.

Sweet, spongy and covered in creamy icing – what’s not to love about cake? Whether your celebrating a birthday, anniversary, wedding or christening, or simply ‘just because’ – cake instantly adds a fun and delicious sense of occasion and an unforgettable moment when it’s brought to the table ablaze with flickering candles. Of course a Colin the Caterpillar will at times suffice, but some celebrations call for something rather more special, and that’s where Yevnig Davis comes in…

“’For when it has to be perfect’ – that is our ethos and philosophy” explains Yevnig, cake designer, creator and founder of luxury cake company Unique Cakes by Yevnig, based in Hampshire.

“I like to listen! Each commission is unique. I would say my style is feminine, architectural and tasteful. I am not afraid to hold back, and I like to incorporate unusual and unique elements to each design”

A far cry from from artisan baking, Yevnig’s first job was in fact at a television production company in Beirut, Lebanon, which is where she got her first taste of looking after VIPs, including an array of international pop stars, visiting dignitaries and even royalty on occasion.

“Working in such a demanding environment where only the best will do really helped me learn how to work and deliver under pressure, and it really gave me a taste of what is expected in the luxury-market”

Yevnig is now one of the UK’s most sought after luxury cake designers, creating elegant, extravagant centrepiece wedding cakes and dessert tables of distinction. Her exclusive, award winning bespoke service offers completely unique designs and the finest cake flavours, and is recognised by prestigious venues such as The Savoy, The RitzClaridge’s, Four Seasons Hotels, Royal Berkshire Ascot, Farnham CastleHampton Court Palace and more.

‘I actually trained in HR and I thoroughly enjoyed it, but when my sons came along and I left work I fell into cake decorating and the rest, as they say, is history!” she smiles.

“Sometimes I miss the office banter and working in a big team of people. A great deal of what I do as an artisan cake decorator is by nature quite solitary. But then again, when I’m in my ‘creative zone’ designing and creating cakes I don’t really like distractions – so it’s a balance”

Despite her HR training and her career in television, Yevnig has always been creative – she tells me how even when growing up she was never far from a sketchbook, and her dream at school was to be a wedding dress designer, which is not a million miles from the awe-inspiring wedding cakes that she designs and makes today.

“Sometimes I dust off my old sketch books and even back then I think I had an eye for detail –for materials, textures, patterns and elegant flowing lines in particular” she explains.

“In my current work I always focus on the intricacies of my wedding couples – their dress fabric, the architectural features of the venue, the theme and mood of their wedding palette, and of course their own characters and aspirations”

Another source of Yevnig’s inspiration stems from her upbringing in the vibrant Mediterranean, where she was surrounded by characteristically lively people, animated language and wonderful food. 

‘There is always a party or get-together going on back home, and the Mediterraneans believe strongly in the family coming around the table to eat at the weekend - values that I now hold dear in my family” she explains.

“As people we are known for getting very passionate about things, and I’m told I can be fiery at times! Maybe that’s because I’m passionate about what I do and what I’ve done to get this far. Perhaps it’s the Mediterranean hot blood, but I do strongly believe in being true to oneself and fighting for your dreams. It can be very tough out there”

Unique Cakes by Yevnig was officially founded in 2013 but Yevnig was, as she describes it, first ‘bitten the cake bug’ after she baked and decorated her first ever cake for her son’s first birthday back in 2009.

“Looking back the cake was a bit different to the norm! It certainly got all the other mums and friends talking! And so I started to get requests for similar cakes…” she enthuses.

During the five years prior to launch, Yevnig worked hard behind the scenes; building a production kitchen, testing recipes, honing her baking techniques to get the ultimate moist and fluffy sponge and equipping herself with an array of tools imported from all over the world.

“And of course practise, practise, practise - until I was sure that when I launched everything was right. And I haven’t looked back since”

Unique Cakes by Yevnig quickly became a familiar and trusted name on the luxury wedding scene, supported by glowing client testimonials and endorsement by luxury wedding industry colleagues including wedding planners, florists, photographers, venues and more. In 2015 Yevnig’s luxury bakery was evaluated by the National Association of Wedding Professionals – an organisation committed to promoting professionalism within the wedding industry led by renowned wedding planners Lester Gethings, Amanda Sherlock and Siobhan Craven-Robins. Unique Cakes by Yevnig was accepted, and have been proud members of the NAWP  ever since.

“Building our reputation has involved honesty from the very start, and a willingness to work within the unique traditions of each venue – they are all very different. Also gratitude, and good working relationships” she explains.

“I love what I do and feel very fortunate to be granted such amazing responsibility being a part of someone’s biggest day. What we do at Unique Cakes by Yevnig is, I hope, distinctive and always individual”

In 2016 Yevnig’s bespoke bakery was crowned Best Cake Designer for London and the South East at The Wedding Industry Awards  - an accolade that she is understandably proud to have achieved.

“Our wedding cakes, which are sometimes rather large and quite grand, truly capture the essence of the couple getting married, and complement the surroundings of the wedding venue” she adds.

Her signature Grand Centrepiece Wedding Cakes are quite literally breath-taking; The Evelina, for example, is a simply magnificent 5-tier white, pink and golden masterpiece dressed to seriously impress; the couples’ initials are delicately piped inside an imperial crest on 24-carat gold leaf, combined with fabulous handcrafted sugar-flower accents and glorious pearl and lace patterns to compliment the Bride’s dress. The Somerley is a stunning five-tier Marie Antoinette-style creation, decorated with lavish gilded coat-of-arms, brooches and beading, with an ornate golden chalice crown, topped by a generous sugar flower bouquet.

“Many of my ideas are led by fashion. Wedding dresses and materials are a major source of inspiration and these are ever-evolving” Yevnig explains.

“I also love to travel for inspiration – in the UK and internationally - to discover buildings, sculptures and ornate features”

Yevnig is, without doubt, incredibly passionate about her craft, and her cakes. She tells me that she is constantly sketching new ideas, testing new recipes and enjoys pushing the boundaries of conventional cake-design. Each cake that she creates is completely unique and handmade to ensure distinctive character and taste, and by typically working exclusively on just one commission at a time in her dedicated kitchen, Yevnig ensures that each individual creation has her undivided attention.

“It’s very important to see the cake through the client’s eyes, by meeting with them, learning about them and understanding their vision and themes, then I can add my skills to transforming their vision into edible art” she enthuses.

“And I always like to create something new, inspired by a good love story and a beautiful venue. The personal touch is very important to me, and my passion is at the heart of every commission. My clients are the most special part of my business and often become good friends!”

In addition to creating grand centrepiece cakes for luxury weddings, Yevnig’s boutique cake company can also whip up wonderful cakes for all occasions such as birthdays and anniversaries, as well as a range of staggering cupcake towers, beautiful miniature cakes, cake pops, cookies, meringues, tray bakes, macaroons and more, which can all be brought together to create lavish dessert table displays that have real, mouth watering WOW factor. Tried and tested flavours include strawberry and champagne, white chocolate and blueberries and the dangerously delicious-sounding Devil’s Chocolate Mud Cake, whilst luxury ingredients include the very best flour, organic cocoa, Madagascan vanilla, Fairtrade sugar and Belgium couverture chocolate to name just a few - ensuring that her cakes taste as amazing as they look.

“The ingredients are of course very important and I bake in-house by hand using my own techniques. I never compromise on quality, and I don’t rest until the job is done and the cake is in place, handed over at the venue”

2018 is set to be bigger and busier than ever for Yevnig, with various weddings and events already lined up, but as always she is ahead of the curve when it comes to next year’s trends.

“Shimmers and metallic finishes are hot for 2018, and the colour ultra-violet will also be big next year” she tells me excitedly.

“It will certainly be interesting combining all those elements together into one grand cake… but I do love a challenge!”
