Billy and Jack's mouth watering, tummy rumbling NYE desert
New Year's Eve is THE DEFINITION of dinner party, and no self respecting host would let their guests' tummies go without the MAIN ATTRACTION - the desert! So here Billy and Jack share their recipe for a deliciously warming pudding this NYE!

Prepare your pears, you can either carefully peel them, chop the base off and keep them whole which is a very nice way of serving them, or, peel, core and cut in half which reduces cooking time and avoids your guests eating around the core.

To make your cooking syrup combine the wine, sugar, molasses and spices and heat through until boiling. Add 100g of the blackberries, the orange zest and the pears.

Poach on a gentle simmer for 20-25 minutes or until the pears are soft to the touch but not about to fall apart.

Remove the pears and strain the liquid to remove any pips and spices and return to the heat. Bring back to the boil and reduce until the liquid has reduced by half. Add the butter and whisk well to make a beautiful glossy sauce.

To serve, place the pear on the plate and spoon over a little sauce. Pair with a rich vanilla ice cream and a few blackberries.
