Anjula Devi shares her top tips for creating authentic Indian food at home

Chef and Author Anjula Devi is taking the Indian culinary world by storm with her recipes packed with spices and her uniquely healthy way of cooking traditional Indian dishes. Here she shares her top tips on creating authentic Indian food using fresh produce and balanced spices to create wonderful, delicious and nutritious meals at home.

Anjula Devi's Top Tips For Creating Authentic Indian Food At Home

  • When heating your spices, just tease the oils and aromas out of them very gently for a minute or so

  • My masala dabba contains my key spices which are; Indian bay leaves, turmeric powder, cumin seed, brown mustard seeds, black peppercorns (the King of spice), red chilli flakes, coriander seeds and cassia bark, and my warming spices; cardamom, fennel seeds, fenugreek and Kashmiri chillies

  • Pierce your chillies a few times with a cocktail stick. That way you can remove them when you feel that they’ve given enough heat to your dish

  • Cook your onions and tomatoes long and slow, add a little oil salt and vinegar and freeze them in bags of the right quantities. This saves a lot of time and ensures that they are rich and full of flavour

  • Use raw papaya as a tenderiser for red meat. It is amazing!

  • Use jaggery (unrefined sugar cane) to balance out the acidity of your tomatoes
