With Mothering Sunday just around the corner it’s time to get planning, and what better treat could there be than a luxurious afternoon tea? Owner of Orange Pekoe, one of London’s leading tearooms, Marianna Hadjigeorgiou knows a thing or two about a good brew and here she shares some of her expert tea knowledge with TOAST, including her top tips for creating a luxurious afternoon tea at home – perfect for spoiling mum this year.

"Afternoon tea is very feminine; it’s relaxing and just so traditional. Sweet cake washed down with warm perfect brewed tea is simply quiet perfect!" says Marianna

"Finger sandwiches made from freshly sliced delicate bread – the key is to make them as fresh as possible – make them as you eat them even, so that they don’t dry out. Always offer a selection of fillings for your guest. Our favourite fillings are:

    • Coronation chicken
    • Homemade egg mayo
    • Scottish smoked salmon with cream cheese or lemon and cracked pepper
    • Montgomery cheddar with homemade chutney
    • Honey roast thin ham from the butcher with English Mustard or Piccalilli

"Warm scones are essential. Warm gently in the oven and serve with Cornish clotted cream, and lots of it! Try and use homemade seasonal jam for an extra personal touch. If not then go with the best you can afford."
