Yolkin owner and chef Sammie loves to bake. Macarons especially, but they are finicky little things and only use egg whites. Not wanting to waste the yolks, but facing a revolt from her family because she kept force-feeding them custard, she set upon looking for another recipe to use them in. Whilst continuing to bake macarons with the egg whites, Sammie started experimented with fun ice cream flavours using the egg yolks. One day an idea popped in to her head - what if she somehow, sandwiched them together? The rest is history.
Now Sammie sells her delicious (and very beautiful) creations at various food festivals where she almost always sells out, and she currently has a pop-up shop in the heart of London’s Soho.
Her incredible flavours include Matcha Oreo, Honeycomb, Horlicks, Jasmine Tea, Toffee Apple - the mouth watering list goes on, and for Christmas she has whipped up Gingerbread and Chocolate Orange varieties, as well as some very cute snowmen shaped macaroons, filled with peppermint candy cane ganache!
