Hen Corner's Christmas Pudding Recipe

It's Stir-Up Sunday this weekend, which means it’s time to roll up your sleeves and get making your very own Christmas pudding. Here is a versatile and delicious recipe from urban farm and cookery school Hen Corner, for you to stir up with friends and family this year.

In Victorian times, entire families would gather in the kitchen to mix up a cracking Christmas pudding together; the Stir-Up Sunday tradition says that each and every member of the family should take a turn to stir the pudding mix, and whilst doing so they can make a special wish for the year ahead.

“The tradition of Stir-Up Sunday goes back many years and is said to in fact be linked to the collect prayer read out in churches on the last Sunday before Advent, ” explains Sara Ward, who runs an annual Stir Up Sunday Workshop at her urban farm and cookery and craft school, Hen Corner.

“I like to think of all the women running home, clutching their skirts, ready to raid the larder! So I like to ensure that I have the date firmly fixed in my diary each year.”

A survey in 2007 found that two thirds of British children have never stirred a Christmas pudding mix, and it is now thought that more than 90 per cent of families buy shop-bought puddings. This year, why not embrace the charming tradition of Stir Up Sunday and make your very own pudding with the help of friends and family? Not only will it be a day of festive fun but you can also tick ‘pudding’ off your Christmas shopping list, and you’ll feel incredibly satisfied when you light your homemade pud and make your triumphant entrance into the dining room on Christmas Day!

“This Christmas pudding recipe is nice and flexible, which allows you to incorporate your favourite flavours,” explains Sara.

The guest of honour, of course, is the pudding itself, so without further ado here is Hen Corner’s fantastic Christmas Pudding recipe.


Hen Corner Christmas Pudding


  • 350g dried fruit (sultanas, currants, figs, apricots, cranberries, peel, etc.)
  • 300ml spirit or liqueur (brandy, rum, port, Cointreau, etc.)
  • 175g fresh breadcrumbs
  • 140g butter (frozen & grated)
  • 40g self raising flour
  • 195g dark brown sugar
  • 1 egg (beaten)
  • 2tsp ground spice (cinnamon, nutmeg, cloves, mixed)


  1. Place the fruit and alcohol in a small saucepan, warm gently for 5 minutes then stand for 1 hour.
  2. Tip all ingredients into a large bowl and stir together for 5 minutes.
  3. Butter and line a 1 ltr pudding basin with greaseproof paper, tightly fill with pudding mix.
  4. Cover the basin with a double layer of pleated greaseproof paper and tin foil, secured with string around the rim and across the top as a handle.
  5. Steam for 5-6 hours. Allow to cool, store in a cool dry place, topping up with extra alcohol if you wish!
  6. To serve, steam again for 1 hour to ensure it’s well heated through
