RIP fruit cake – modern-day desserts are all about the wow factor

Time was, a Victoria sponge and cup of Earl Grey was enough to impress. But no more. Since the Great British Bake Off exploded onto our screens in 2010, we’ve become a nation obsessed. No longer might the phrase “soggy bottom” result in a stifled chortle – an uncooked tart base is no laughing matter.

It’s not just about taste, though. Search for “cake design” on Instagram and you’ll find over half a million hashtags, while there are more than 300,000 “cake porn” images to get would-be Mary Berry’s excited.

Flower wreaths

Flowers on cake is nothing new, but now those in the know are putting a ring on it. Think a Glastonbury floral crown, only on baked goods instead of a drunk person’s head. We love this elegant design by Blossom & Crumb, which comes in Madagascan vanilla, rich dark chocolate, classic chocolate, lemon, red velvet, salted caramel, chocolate orange, raspberry, Earl Grey with lavender scented buttercream, coffee, lime and coconut or fruit cake.

Perfect Pastels

Pale, soft hues are huge for 2016, especially as Pantone named Rose Quartz and Serenity Blue as its colours of the year. “Teaming blush pink with a splash of metallic is a popular look,” says Susie Kelly, the creative genius behind S.K Cakes and this gorgeous design. “Add some wafer paper flowers and you’ll have a cake that’s seriously on trend.”

Ombre Obsession

“Ombre cakes are fun to create, if a little complicated,” says Cat of the oh-so-pretty central London cake shop Crumbs & Doilies. “To achieve the effect, you need to mix a lot of different shades of icing, which is roughly applied to the sponge, then gently blended together. Elegant in its simplicity, it’s a great alternative to a more traditional cake.”

Delicious Drippy cakes

First, it was cupcakes, then came rainbow sponges – now, we’re going dippy for drippy. If it’s a show-stopper you’re after, this is a cake to go for. “There are almost limitless decoration options,” says Leanne Kelly, owner of The Whimsical Cakery, in Northamptonshire. “You can overload the cake with goodies for serious indulgence or opt for something simpler. It’s a style that can be adapted to any occasion.”

The Marble Cake

Marble is everywhere – in luxury bathrooms, on high-end stationery and now, on icing. “Marble is associated with grandeur, which is why I think marble cakes are so popular for a special occasion,” says Asma Hassan, lead designer at the Sugared Saffron Cake Studio. “It’s also really striking, so you still get a dramatic look without compromising on simplicity.”
